Salmon Gravlax with a Black Sesame Seed Collar and Peppered Greens, Buckwheat Honey Dressing

        2270G                  fresh salmon Atlantic (2 sides)

        30G                      spice pepper black cracked

        1000G                  seasoning salt nitrate

        1BUNCH             herb dill fresh

        240ML                 syrup maple med pure Ontario

 

     Method:

     Lay salmon fillets in non-reactive container, skin side down. Pour half of the maple syrup onto each side. Sprinkle course

     Pepper onto each side, ruff chop dill and spread evenly on each side as well. Cover each side with course salt and

     Refrigerate for 24hrs. Remove from salt mixture and rinse other ingredients off. Dry with clean cloth or absorbent rag.

 

 

Black Sesame Seed Collar                Yields 4 collars

 

Important note. You will need 2 inch stainless steel ring molds in order for this recipe. The Filo Pastry is wrapped and baked around the ring.

Ingredients

1 sheet of phyllo pastry

4 TBSP of melted butter

1 TBSP of Black Sesame Seeds

 

Method

Lay phyllo on clean surface. Brush with butter. Sprinkle sesame seeds onto pastry.

Fold Pastry in half; cut pastry into 4 strips about 2 inches wide. Wrap Pastry around ring molds and bake in oven at 350 for about 10min or until golden brown. Remove from oven and pull pastry carefully away from mold while still warm.

Buckwheat Honey Vinaigrette

·         180ml Olive oil   

·         60ml rice wine vinegar

·         ½ fl ounce or 3 tsp Dijon mustard

·         1 tsp buckwheat honey

Combine all ingredients and mix with high speed hand blender until mixture emulsifies
